Shiitake mushrooms (Lentinus edodes) have been used in Japan and China for thousands of years. It is known as both a food and medicinal fungus. Shiitake mushrooms contain fats, carbohydrates, proteins, fiber, vitamins and minerals. However, its key ingredient is polysaccharides called lentinans. Shiitake polysaccharide is extracted from the mycelium crushed by shiitake mushrooms, which is rich in polysaccharides and lignin.
